In these days of plastic-wrapped supermarket meat, the act of choosing the right cut for the right dish can seem daunting. Leanne Kitchen unsurprisingly recommends finding a good local butcher as a first step. Starting with basic kitchen equipment such as knives, a thermometer and a chargrill pan, she covers common cooking methods before moving on to dedicated chapters covering beef, lamb, pork, veal, offal, poultry and game. Part of the Providor series that includes The Baker, The Patisserie and The Delicatessen, The Dairy and The Greengrocer, it's a nicely illustrated, handsome publication that's easy to dip into. -- LARISSA DUBECKI
