Leanne Kitchen unsurprisingly recommends finding a good local butcher as a first step. Starting with basic kitchen equipment such as knives, a thermometer and a chargrill pan, she covers common cooking methods before moving on to dedicated chapters covering beef, lamb, pork, veal, offal, poultry and game.
